"It's like a sponge!" is always the first thing that comes to mind when it starts smelling like a salty cake.
One of the main advantages of the cake, apart from its amazing aroma and " fluffy" texture, is that it is extremely easy and quick to prepare - just mix all the ingredients, stir, and bake the mixture! It doesn't take more than 5 minutes.
The flours we will use are rice and corn, as both do not contain gluten. Accordingly, the gluten-free salty cake is suitable for people with gluten intolerance and other diseases in which the consumption of gluten is not recommended, and for all those who avoid gluten.
We use cottage cheese in the recipe, but you can replace half of it or the whole with cheese and possibly skip the adding of salt.
In addition to this cake, I recommend trying the recipe for juicy oatmeal pie. The pie can be gluten-free if you use gluten-free oats.
Here is the recipe for such a juicy and delicious gluten-free cake!
- 4 eggs
- 600 g yogurt
- 80 g melted butter
- 2 tsp baking soda
- 1 tsp salt
- 180 g rice flour
- 180 g corn flour
- 300 g cottage cheese
Method of preparation:
Beat the eggs, then add the yogurt with the baking soda, salt, and melted butter. Mix well and add the flour - rice and corn, and finally - cottage cheese. Stir until a homogeneous mixture is obtained.
Pour the mixture into a baking pan covered with baking paper and greased with a little butter so that it does not stick.
Bake the cake in a preheated to 180-degree Celsius oven for 45 minutes or until done.
