The fastest vegan ice cream

It's summer! Or to put it "sweeter" - it's time for ice cream ! The most pleasant (or sharing the first positions with the sea) and cooling pleasure to treat yourself to during the increasingly hot summer days!

Although so tempting and found in the smallest neighborhood shops, however, often the ready ice cream in the chains is full of a number of not very nutritious ingredients. And of course - enviable amounts of sugar, glucose and glucose-fructose syrup.

Fortunately, the production of quality ingredients is becoming increasingly popular and for people it matters exactly what they eat. Accordingly, ice cream is offered in much better alternatives, and the variety of flavors is becoming vast.

However, when you feel like eating ice cream... you want it right away! And if there is no cool ice cream shop around you using real products, the alternative of making it at home in a few minutes does not sound bad at all. And the fact that it is vegan, fruity and without any sugar are serious advantages in favor of rolling up your sleeves!

Here's how to make the fastest and easiest vegan ice cream with bananas, blueberries, chocolate glaze and hazelnut pieces. No added sugar!

Ingredients (for about 2 full glasses):

For ice cream:

  • 300 g banana pieces (about 2 bananas), pre-frozen for several hours
  • 60 g blueberries pre-frozen for several hours (also sold frozen)

For the chocolate glaze:

  • 5 g of cocoa
  • 5 g of coconut butter, melted
  • 20 g agave

For sprinkling:

  • 10 g hazelnuts
  • a few frozen blueberries

Method of preparation:

Preparation of ice cream:

To make fruit ice cream, you need to freeze banana slices and blueberries for a few hours. Some large chains offer packaged frozen blueberries - quite convenient for the off-season.
Take out the frozen bananas and let them thaw slightly for 5-10 minutes. If they are too hard, it is possible to break the food processor you are using.
Place the cups to be used in the freezer for a few minutes.

In a chopper / food processor, blend the bananas until you get a nice and "airy" cream . Ripe bananas are sweet enough, but if you like you can add agave, honey or other sweetener.

Distribute half in the chilled glasses . Add the frozen blueberries to the rest of the chopper and beat either until homogeneous or leave whole fruits. Distribute the mixture in the cups.

Preparation of the glaze:

Melt the coconut butter if it is firm. Add agave and stir (with a wire stirrer is easiest). Add the sifted cocoa and stir until you get a shiny chocolate glaze.
Spread the glaze over the fruit ice cream, sprinkle with pieces of hazelnuts and blueberries.

Notes:
* If you prefer chocolate ice cream, add a little cocoa to the banana cream and if you need - a sweetener to taste.
* You can add to ice cream a variety of fruits, nuts, chocolate and even pieces of biscuits.
* Ice cream can be consumed immediately or cooled for a while. If you have left for another day, there are 2 options: to eat it this way or to blend it quickly again to make it more creamy.
